After the harvest and a cold maceration of about ten hours, the grapes are pressed very gently and the must settles for 18 to 24 hours. Then, the fermentation is very slow. Eventually, one or two rackings are necessary in the winter.
This wine has a salmon pink robe and a briliant radiance. On the nose, it intensity and aromatic richness is astounding: notes of fresh fruit (pear, redcurrant) completed with spicy notes (liquorice, ginger, fresh mint). This aromatic complexity develops with great fineness and creates an exquisite harmony. On the mouth, the red fruit are overwhelming.
