After the harvest and a cold maceration of about ten hours, the grapes are pressed very gently and the must settles for 18 to 24 hours. Then, the fermentation is very slow. Eventually, one or two rackings are necessary in the winter.
With its raspberry red robe, this expressive wine has a rare aromatic intensity. Many different aromas intermingle: from tastes of candy to aromas of apple through raspberry, both in fineness and strength. Some notes of exotic fruit and fruit jelly brings complexity to this fresh and well-balanced wine. The attack is fresh, light and flowery. The mouth is long and supple.
