Vinification and ageing

The grapes are harvested in the morning in order to preserve all their aromas. They are delicately pressed and the must is settled about 18 hours later. The fermentation starts at low temperature and lasts for about 20 days. Eventually, the wine is racked to ensure its refining.

With its very pale yellow colour, this wine has very expressive aromas of grapefruit. Fine notes of smoked food and toasted bread delicately combine together. Its aromatic expression is complex and a sensation of freshness develops as the wine aerates. Aromas of exotic fruit appear. The attack is direct and fresh. This freshness on the mouth comes from aromas of orange and menthol. This wine is perfectly balanced and long on the mouth.
